  2. 1/4 cup bulgur wheat

  3. 1 pound ground lamb

  4. 1/2 cup snipped parsley

  5. 2 tablespoons finely chopped onion

  6. 1 tablespoon dry red wine

  7. 1 clove garlic -- minced

  8. 1/8 teaspoon dried mint -- crushed

  9. 1/4 teaspoon ground allspice

  10. 1/2 teaspoon salt

  11. pita bread

  12. lettuce leaves

  13. chopped cucumber

  14. plain yogurt

  1. Soak bulgur wheat in warm water for 1 hour; drain well.

  2. Combine bulgur with ground lamb, parsley, onion, red wine, garlic, mint, allspice and salt.

  3. Shape into patties and grill over medium coals for 16-18 minutes or until done.

  4. Serve with pita bread, lettuce, cucumber and yogurt.
