  1. 1 packet 25-calorie hot chocolate mix

  2. 1/2; (520 g) box devil's food cake mix

  3. 110 ml fat-free liquid egg substitute

  4. 1 tbsp no-calorie granulated sweetener or granulated sugar

  5. 1/8 tsp salt

  6. 25 g jet-puffed marshmallow creme

  7. 1 tsp light vanilla soy milk

  8. 1 tbsp mini milk chocolate chips, plus more (for optional garnish)

  9. 12 mini marshmallows, plus more for garnish

  1. Chocolate marshmallow madness cupcakes 1) Preheat the oven to 180 degrees C. Line a 12-count muffin pan with foil baking cups and/or spray with nonstick spray. For the cupcakes:

  2. 1) In a tall glass, combine cocoa mix with 60 ml hot water. Stir until cocoa dissolves. Add 180 ml cold water and stir well.

  3. In a large mixing bowl, combine cake mix, egg substitute, sweetener, and salt. Add cocoa mixture and whisk until smooth.

  4. Evenly distribute cake mixture among the prepared muffin cups.

  5. Bake in the oven for about 15 mins, until a toothpick inserted into the center of a cupcake comes out clean. Remove from oven and let cool. To make the glaze:

  6. 1) Put the marshmallow creme in a small dish. Add soymilk and mix well.

  7. Once the cupcakes have cooled completely, drizzle marshmallow glaze over them. Top each cupcake with 1/4 tsp chocolate chips and one mini marshmallow.

  8. Refrigerate until ready to serve. Garnish the cupcakes with additional chocolate chips and marshmallows, if using.
