  1. 1 Cup Whole Wheat Flour

  2. 1/2 Cup Unbleached Flour

  3. 3 Tbsp. Brown Sugar

  4. 1 Tbsp. Baking Powder

  5. 1 Tsp. Soda

  6. 1/2 Tsp. Salt

  7. 1/2 Cup Currants

  8. 1 Cup Cooked Quinoa

  9. 2 Eggs

  10. 2 Tbsp. Melted Butter

  11. 1 Cup Buttermilk

  1. Directions Sift together flours, brown sugar, baking powder, soda and salt.

  2. Stir in currants and cooked quinoa.

  3. In another bowl, whisk eggs with melted butter and buttermilk.

  4. Make a well in dry ingredients and add liquid, stirring no more than 10 seconds.

  5. Spoon into greased muffin tins and bake until golden brown.

  6. Bake at 400 degrees 18-20 minutes
