  1. 500g mince (you can use pork, chicken, or a mixture. I use pork/veal mince)

  2. 8 dried shiitake mushrooms (soaked for at least 30min)

  3. cup canned water chestnuts

  4. 6 sprigs of spring onion, sliced

  5. cup pine nuts

  6. 2 tsp cornflour

  7. 1 tbsp Chinese cooking wine (Shao Hsing or Rice or Sherry)

  8. 1 tbsp soy sauce

  9. 1 tbsp oyster sauce

  10. 2 tsp hoisin sauce (topping extra)

  11. 1 tsp sugar

  12. cup chicken stock

  13. 2-3 tbsp peanut oil

  14. 3 cloves garlic, chopped

  15. Coriander sprigs (garnishing)

  16. Lettuce cups (baby cos, iceberg or Chinese curly lettuce)

  1. Peel and wash the required amount of lettuce leaves and shake off any excess water. Trim if necessary.

  2. Add the soaked mushrooms and water chestnuts into food chopper (or food processor) and process till finely chopped. Set aside.

  3. If using pine nuts, place pine nuts in a frying pan and toast using low heat. Toss them around frequently to avoid burning. Remove and set aside when they are golden brown.

  4. Add cornflour into a bowl and add rice wine. Use a spoon and mix the cornflour till all dissolved. Then add soy sauce, oyster sauce, hoisin sauce, sugar and chicken stock and mix thoroughly. Set aside.

  5. Heat wok till it's smoking hot, add peanut oil. Swirl it around the wok and when oil is hot, add the chopped garlic and fry till fragrant (approximately 5 seconds).

  6. Add the mince. Stir fry till it's cooked, approximately 3 minutes.

  7. Add mushroom and water chestnut mixture into wok and continue stir frying for another 2 minutes.

  8. Give the sauce mixture in the bowl a quick stir to make sure that any settling of the cornflour is all mixed through again, pour the sauce into wok. Cook for 30 seconds.

  9. Toss through pine nuts and spring onions. The whole mixture should look saucy yet thickened.

  10. Serve in large bowl, garnish with coriander.

  11. To make a wrap, spoon mince into lettuce cups, top with a teaspoon of more hoisin sauce if desired.
