  1. Pancetta and Cinnamon Waffles

  3. serves 4-6 1/2 c chopped walnuts

  4. 1 1/2 tsp ground cinnamon

  5. 1 Tbsp olive oil

  6. 1/2 tsp salt

  7. 2 lg eggs

  8. 1/2 c pure maple syrup, warm

  9. 3 c Belgian waffle mix

  10. 1/3 c vegetable oil, plus more for the waffle iron

  11. 3 (4-ounces) slices of pancetta, each about 1/4 thick, diced into 1/4 pieces

  12. 1. Preheat the oven to 350 degrees F. Spread walnuts in an even layer on a rimmed baking sheet, Bake for 10-12 minutes, until toasted and fragrant. Set aside to cool.

  13. 2. Preheat and lightly grease waffle iron. Heat the olive oil in a medium skillet over medium-high heat. Add pancetta and cook until brown and crispy, 3-5 min. Transfer pancetta to a paper towel-lined plate to cool.

  14. 3. In a large mixing bowl, combine the waffle mix, eggs, vegetable oil, 1 1/2 cup water, cinnamon and salt. Using a whisk, blend ingredients together until smooth. Stir in pancetta.

  15. 4. Pour batter, using the amount recommended by the waffle iron manufacturer's instructions, into the preheated waffle iron. Cook waffles for 3 to 4 minutes, or until golden brown. Place waffles onto serving plates. Sprinkle with chopped walnuts and drizzle with maple syrup. Serve immediately.
