  1. 1 3/4 cups unbleached flour

  2. 1/3 cup rolled oats

  3. 2/3 cup brown sugar

  4. 1 teaspoon baking soda

  5. 1/4 teaspoon sea salt

  6. 1/2 teaspoon cardamom ground

  7. 1/4 teaspoon cinnamon ground

  8. 1/8 teaspoon nutmeg ground

  9. 1/2 cup chopped almonds

  10. 1 egg plus

  11. 2 egg whites, beaten

  12. 1 cup mashed bananas

  13. 1/4 cup oil or melted butter

  14. 1 tablespoon milk

  15. 1 tablespoon lemon juice

  16. 1 teaspoon almond extract

  17. 1 teaspoon vanilla extract

  1. Preheat oven to 350 degrees.

  2. Combine dry ingredients in a large bowl. Make a well in the center and set aside.

  3. Combine remaining ingredients in another bowl. Mix until smooth.

  4. Pour the wet ingredients into the dry and mix with a spoon until just combined. Pour into an oiled loaf pan and bake until loaf tests done, about 45 minutes.
