  29. 2 onions, sliced

  30. 2 tbsp rapeseed or sunflower oil

  31. 450g basmati rice

  32. 2 black or green cardamoms

  33. 2 x 5cm cinnamon sticks

  34. 4 cloves

  35. 2 bay leaves

  36. Bunch of fresh coriander, stalks and leaves separated

  37. 50g butter
