  1. 3 eggs

  2. 250g ground almonds

  3. 250g caster sugar

  4. 1 teaspoon vanilla sugar

  5. 70g hazelnuts, ground

  6. 1 pinch ground cloves

  7. 2 teaspoons ground cinnamon

  8. 100g cut mixed peel

  9. 70mm round edible rice paper

  10. dark chocolate, milk chocolate or icing sugar for coating

  1. Combine eggs, almonds, sugar, vanilla sugar, hazelnuts, cloves, cinnamon, mixed peel in a bowl and mix together.

  2. Shape the mixture into balls and press flat on rice paper. The resulting mixture should be no more than 1.5cm high.

  3. Place on a baking tray lined with baking parchment, leaving adequate room for spreading.

  4. Preheat oven to 180 C/ Gas 4 and bake for 15-20 minutes or until light brown in colour. Decorate with your choice of coating.
