  1. Oil 2 Tbsp

  2. Bay Leaf 1

  3. Cinnamon Stick 1 (inch) piece

  4. Black Cardamom 1

  5. Green Cardamom 2

  6. Whole Cloves 2

  7. Onion finely chopped 1 large

  8. Ginger minced/paste 2 tsp

  9. Garlic minced/paste 2 tsp

  10. Green Chilies finely chopped to taste

  11. Turmeric Powder 1/2 tsp

  12. Red Chili Powder to taste

  13. Salt to taste

  14. Coriander Powder 2 tsp

  15. Cumin Powder 1 tsp

  16. Tomatoes pureed 2 large

  17. Hard Boiled Eggs peeled and grated 6

  18. (Frozen) Green Peas 1/2 cup

  19. Garam Masala 1/2 tsp

  20. Water 1/2 cup (or little more)

  21. Cilantro finely chopped for garnishing

  1. Tomato Puree preparation:

  2. Blanch tomatoes in hot water for 3 to 5 mins, skin it off and blend it to make puree.

  3. Procedure:

  4. Heat Oil in a medium non-stick pan on medium flame.

  5. Add Bay Leaf, Cinnamon Stick, Black Cardamom, Green Cardamom and Whole Cloves. Stir for 30 seconds.

  6. Add Onions and a little salt, mix well, cover and cook for about 15 minutes stirring frequently.

  7. Add Ginger and Garlic, mix well and cook uncovered for another 5 minutes until Onions turn brown and oil starts to separate from the mixture.

  8. Add Green Chilies and Tomatoes, mix well, cover and cook for about 10 minutes. Be sure to stir a few times in between.

  9. Remove cover and continue to cook until oil starts to separate from the mixture again.

  10. Add Red Chili Powder, Turmeric Powder, Coriander Powder and Cumin Powder. Mix well.

  11. Add grated hard boiled eggs, salt and a little water and mix well.

  12. . Add Green Peas (cooked in the microwave for 1 minute with a little water) and Garam Masala and cook for 2-3 mintues.

  13. . Garnish with fresh Cilantro.
