  1. 1 cored red cabbage (chopped or shredded)

  2. 3 tablespoons butter or 4 slices chopped bacon

  3. 1/3 cup granulated sugar

  4. 1/2-3/4 medium onion , chopped

  5. 1 cored and peeled tart apple , chopped

  6. 1/3 cup red wine vinegar or 1/3 cup apple cider vinegar

  7. 2 -3 teaspoons fresh lemon juice

  8. 1/2 teaspoon caraway seed

  9. 1/4 teaspoon ground ginger

  10. 1/8 teaspoon ground allspice

  11. 1/8 teaspoon ground cloves

  12. 1 pinch ground cinnamon

  13. salt & fresh ground pepper, to taste

  1. CORE and chop (or shred) the red cabbage then saute in butter (or cook 4 slices chopped bacon in skillet until crisp, then begin sauteeing cabbage ) until just softened.

  2. ADD the sugar, onions and apples then continue cooking 5 minutes.

  3. ADD the remaining ingredients.

  4. COVER and simmer over low heat for 30 minutes, stirring occasionally.

  5. ADJUST seasoning to taste and serve hot with a beef or pork main course.
