  15. 1/3 cup roasted hazelnuts

  18. 1 1/2 tablespoons cumin seeds

  22. 2 teaspoon white peppercorns

  1. Pork Combine fennel, chilli and salt in pestle and mortar and pound to coarse powder. Store in an airtight container until ready to serve.

  2. To cook, combine rub with remaining ingredients in a small bowl. Rub all over pork and stand 1 hour or until ready to cook. Barbecue pork on grill plate until cooked as desired.

  3. Beef, lamb chicken and fish For remaining rubs, repeat same process as for Pork spice rub. Without the garlic, zest or oil the spice rubs will keep indefinitely.
