  2. 10 piece(s) chicken of choice , legs and thighs tend to be juicier when done

  3. 2 cup(s) fresh tomatoes cut in wedges

  4. 2 whole(s) jalapenos diced

  5. 1 medium onion chopped , large pieces

  6. 4 clove(s) garlic , thinly sliced

  7. 1/4 cup(s) fresh cilantro , cut-up

  8. 1 cup(s) long-grain white rice

  9. 2 cube(s) meican tomatoe boullion w/pollo or chicken flavor 1 small jalapeno , chopped

  1. saute chicken in 2 tbs. olive oil until browned and carmalized drain off oil, add1jalapeno,1 1/2 cups tomatoes, 3/4 of onion pieces , 1 tsp. whole cummin ,simmer for about 30 min,then add cillantro ,simmer ten mins. and turn off keep covered in med. sauce pan heat 1 tbs.olive oil add rice stir to coat ,and slightly brown rice , add 3cups water and boulion cubes,and remaining ingredients cook on med, heat until rice is tender . leaving a little juice . now enjoy you nay cook rice at the same time as chicken
