  1. 2 tablespoons olive oil

  2. 1-1/2 pounds pork tenderloin cut into bite size pieces

  3. 2 cloves garlic minced

  4. 4 sprigs fresh cilantro chopped

  5. 3 tablespoons olive oil

  6. 4 tablespoons red wine vinegar

  7. 2 tablespoons port wine

  8. 1/8 teaspoon salt

  9. 1/8 teaspoon freshly ground black pepper

  10. 1/8 teaspoon cayenne pepper

  1. Heat 2 tablespoons olive oil in a large heavy skillet over high heat.

  2. Sauté pork until evenly browned and fully cooked.

  3. Transfer to a bowl and sprinkle with cilantro and garlic then keep warm.

  4. In small bowl combine 3 tablespoons olive oil, vinegar and port.

  5. Season with salt, black pepper and cayenne.

  6. Whisk until consistency is creamy then stir into cooked pork and serve immediately.
