  2. 2 cups sugar

  3. 1 cup butter, softened

  4. 3 large eggs

  5. 1 tbsp. vanilla extract

  6. 3 cups all purpose flour

  7. 3/4 cup unsweetened cocoa powder

  8. 1/2 tsp. baking powder

  9. 1/2 tsp. baking soda

  10. 1/2 tsp. salt

  11. candy corn

  12. red cinnamon candies

  1. Combine the butter and sugar in a large bowl and beat to blend. Add the eggs one at a time, beating after each addition. Add the vanilla. Add the flour, cocoa, baking powder, baking soda and salt and beat until well mixed. Form the dough into a ball. Divide the dough in half and flatten each half into a disc. Wrap the dough tightly with plastic wrap and refrigerate 2 hours.

  2. Preheat the oven to 350 degrees. Roll out the dough to 1/4 inch thick on a floured surface. Cut out cookies with a 3 inch round cookie cutter. Place the cookies on ungreased sheet pans. Pinch up 2 ears at the top of each cookie with your fingers. Place 2 pieces candy corn on each cookie for the cat eyes and use 1 cinnamon candy for the nose. Press the tines of a fork on each side of the cookie below the eyes to form whiskers. Bakes the cookies about 7 to 9 minutes until set. Cool the cookies 1 minute on the pan before transferring to a rack to cool completely. Store the cookies in an airtight container in a cool place.
