  1. 14 Frog Legs,skinned,and clean

  2. 3/4 Cup flour

  3. 3 Farm Fresh eggs ,beaten

  4. 1 teaspoon paprika

  5. 1 teaspoon garlic

  6. 1/2 teaspoon black pepper ,fresh gind

  7. 1 Cup oil

  8. 3/4 Cup Cornmea 1 Cup Fresh milk

  9. 1 teaspoon onion powder

  10. 1 1/2 teaspoons cayenne pepper

  11. Dash or two of white pepper ...don't know why,just because

  1. Rinse frog legs well and pat dry.

  2. Take some Season-All and sprinkle on the frog legs In bowl,mix egg and milk.

  3. In another bowl,add flour cornmeal,paprika,onion powder,garlic powder,cayenne,black and white pepper.

  4. Coat frog legs with plain flour first...in doing so makes the egg stick to the leg.

  5. Coat with egg mixture.

  6. Dredge in seasoned flour,until well coated.

  7. About this time I put them in the refrigerator to chill out...and in doing so, keeps the coating on the frog leg during cooking.

  8. Heat your oil to hot,fry a few at a time...you do not want to crowd,for you want a nice golden color on all sides.

  9. Lay brown paper bag down,with paper towel on top,let drain.

  10. These are nice served with Hush Puppies.

  11. ~ GIGGING ~

  12. You may not get them all...but then you don't want to...leaving some for next time,some do not get away unscaved,but they will mend.

  13. Gigging should not be confused with Jigging.

  14. Gigging is done in the American South and Midwest.A pratice of hunting frogs and various game and non-game species...In particularly Flounder and Suckers.

  15. A gig is a spear with usually (3) barbred tines,but it could be any number of tines.

  16. A sucker is a bottom feeding fish,and the gigging is usually done at night with lights.They can be canned,or smoked,but the common method is fried.Making small incisions in the flesh,called 'Scoring' as to allow the small internal bones to soften and become palalable.

  17. A Flounder,or sometimes called a Flatfish are found lying at the bottom of shallow water.You can do the gigging in daylight with these,but the best success is done at night,using power light,to target this nocturually foraging fish.

  18. It is kind of a camouflaged type of fish.

  19. The traditionallly hollow bamboo poles were filled with coal and used for lighting,but today other lighting is used,that is if your not a purities.The temporarily blinded flat flounders are speared,but you can sometimes catch them by hand.

  21. I digress...we where Frog Gigging.

  22. This is usually done at night,altou it has been known to be done during the day.

  23. You flash them with a bright beem of light,and their eyes just seem to glow,to shine,which stuns or daze them,making it hard for them to see you coming after them.

  24. Now you have to remember in most States and jurisdictions your going to need a license...Lucky Me.

  25. The Meat on this beasts hind quarters is delicious,and is usually deep fried or sauteed.

  26. Keep in mind the legs of some frogs contain as much meat as the legs of a medium chicken.

  27. Frog legs often are imported from Asia and available at many restaurants or stores,particularly in the Southern United States...but I prefer to hunt...gig...my own.

  28. I usually sever the ligaments to keep this rascal from hoppin' a bit while in the frying pan.

  49. Sat mosquito on his knee.

  50. Next to come in was a broken flea Danced a jig with the bumbley bee.

  51. Next to come in was Mrs Cow.

  52. She tried to dance but she did'nt know how.

  53. Next to come in was a little tick.

  54. She ate so much she made us sick.

  55. Next to come in was a big snake.

  56. Ate up all the wedding cake.

  57. Next to come was the old gray cat.

  58. Swallowed the mouse and ate up the rat.

  59. Mr Frog went a-hoppin up over the brook.

  60. A lily-white duck come and swallowed him up...uh-huh!
