  1. 3 tablespoons lime juice fersh

  2. 3 tablespoons rice vinegar

  3. 2 tablespoons fish sauce or soy sauce if vegetarian

  4. 1 tablespoon water

  5. 1 tablespoon peanut butter creamy

  6. 1 teaspoon chile paste with garlic

  7. 1 clove garlic minced

  8. 6 cups napa cabbage shredded

  9. 2 cups red cabbage shredded

  10. 1 cup sweet red bell pepper strips

  11. 1 cup carrot shredded

  12. 2 tablespoons peanuts chopped, dry-roasted

  13. 1 tablespoon cilantro freshly chopped

  14. 1 tablespoon mint freshly chopped

  1. Combine first 7 ingredients in a large bowl, stirring with a whisk until blended.

  2. Add cabbages, bell pepper, and carrot, and toss gently to coat.

  3. Cover and marinate in refrigerator 1 hour.

  4. Stir in the peanuts, cilantro, and mint just before serving.
