  1. 1 medium/large yellow onion , diced

  2. 2 bell peppers (I used red and green, but any variation), chopped

  3. 1 can diced tomatoes (i found a fennel and roasted garlic flavor that totally worked)

  4. 1 lb andouille (or any spicy sausage cut into rounds)

  5. 1/2 lb peeled deveined shrimp

  6. 1 can chopped clams , liquid reserved

  7. 1 3/4 cup chicken broth

  8. 4 large garlic cloves , minced

  9. 1 tsp (more or less to your taste)

  10. 1 1/2 tsp celery salt

  11. a couple shakes hot sauce

  12. 2 - 3 bay leaves

  13. 1 tbsp thyme

  14. olive oil

  15. cooked rice

  1. First off prep all ingredients...a major help for the entire cooking process.

  2. In a dutch oven (or any large pot with high sides) coat bottom with olive oil and set to medium/high heat. Add sausage and cook until they are all browned on the outside, about 5 - 7 minutes. Add onions, peppers, red pepper flakes and sautee until just wilted down. Add garlic and celery salt continuously mix for 1 - 2 minutes. Add diced tomatoes, clam juice, chicken broth, hot sauce, bay leaves, and thyme. Bring up to a rolling boil, cover and reduce heat to a simmer. Simmer for about 30 minutes, until sauce has reduced by about half. Add clams and shrimp, and simmer for another 5 - 8 minutes, until shrimp have cooked and turned pink. Serve in a deep bowl and top with rice.

  3. NOTE...at the last few minutes I added frozen peas to bring in another layer of flavor. That is completely at your discretion, but it was really great.
