  1. 120g dry polenta or cornmeal

  2. 125g plain flour

  3. 5 tablespoons caster sugar

  4. 2 teaspoons baking powder

  5. 1/2 teaspoon salt

  6. 1 egg, beaten

  7. 4 tablespoons rapeseed oil

  8. 250ml milk

  1. Preheat oven to 200 C / Gas 6. Grease muffin tin or line with paper cases.

  2. In a large bowl, mix together polenta, flour, sugar, baking powder and salt. Add egg, oil and milk; stir gently to combine. Spoon batter into prepared muffin tin.

  3. Bake at 200 C / Gas 6 for 15 to 20 minutes or until a skewer inserted into a muffin comes out clean.
