  1. 500g apples, peeled, cored and sliced

  2. 50g sugar mixed with a little ground cinnamon

  3. For the Batter:

  4. 80g butter, softened

  5. 160g caster sugar

  6. 1 organic lemon, zest grated

  7. 2 eggs

  8. 100g cornflour

  9. 100g plain flour

  10. 3 teaspoons baking powder

  11. 125ml milk

  1. Layer apples in the bottom of a round silicone cake tin (or a springform tin lined with foil).

  2. Sprinkle cinnamon sugar over the apples and set aside for a few minutes.

  3. Preheat oven to 160 C / Gas 2 1/2.

  4. Mix all the batter ingredients together and use to cover the apples. Bake in preheated oven for about 45 minutes.

  5. Let cool in tin for 10 minutes, then invert cake and remove tin.
