  1. 2 Egg yolks

  2. 1 teaspoon 5ml Fresh lemon juice

  3. 1/4 teaspoon 1 1/3ml Salt

  4. 1/8 teaspoon 0.6ml Tabasco sauce

  5. 2 teaspoons 10ml Water

  6. 1/4 lb 113g / 4oz Butter - (1 stick) - melted, warm

  7. 1/4 cup 36g / 1 1/3oz Finely-chopped tasso or spiced ham - (about 1/4 cup)

  1. In a stainless steel bowl set over a pot of simmering water over medium heat, whisk the egg yolks with the lemon juice, salt, Tabasco, and water until pale yellow and slightly thick. Be careful not to let the bowl touch the water.

  2. Remove the bowl from the pot whisking vigorously, add the butter, 1 teaspoon at a time, until all is incorporated. Add the tasso and continue whisking for 30 seconds. Serve immediately.

  3. This recipe yields 3/4 cup of sauce.
