  1. 2 tablespoons 30ml Red wine vinegar

  2. 1/4 teaspoon 1 1/3ml Garlic - minced

  3. 1 tablespoon 15ml Dijon mustard

  4. 6 tablespoons 90ml Vegetable oil

  5. Salt and pepper to taste

  6. 1 Red onion - thinly sliced (small)

  7. 10 cups 400g / 14oz Watercress - red-leaf lettuce

  8. And Belgian endive - bite-size

  1. Combine vinegar, garlic and mustard in mixing bowl. Blend well.

  2. Add oil and salt and pepper to taste; blend well with a wire whisk.

  3. Place onion rings and salad greens in a bowl and toss well with dressing.
