  1. 2 1/2 lb lamb / chicken / mutton

  2. 1 inch pieces

  3. 200 ml Full cream yogurt

  4. 1 tsp nutmeg

  5. 1 tsp mace

  6. 5 cardamom pods

  7. 5 cloves

  8. 1 tsp cinnamon

  9. 2 very finely diced onions

  10. 1 diced onion

  11. 1 whole garlic chopped

  12. 2 inch piece ginger chopped

  13. green chilies (based on your taste...mild 2...spicy 6)

  14. 1/4 tsp Red chilli powder

  15. 2 tsp coriander powder

  16. salt to taste

  17. 6 tbs olive oil

  1. Heat 3 tbs of oil in a thick bottomed vessel till the oil begins to smoke. Add cardamom, nutmeg, mace, cloves, cinnamon, coriander powder, chilli powder, till the aroma's are released (careful you do not burn the spices). Add the finely chopped onions, green chillies, garlic and ginger and continue to fry till onions are golden brown. Put in the meat and let it cook on low heat, stirring occationally.

  2. In a separate pan fry the other chopped onions in 3 tbs of oil till they are brown and crunchy set aside on kitchen towels to blot of excess oil. Enjoy with naan or rice.

  3. Once the meat is almost tender, whip up the yogurt and slowly pour it in the vessel. Let it cook for another 20 minutes. Garnish with the fried onions
