  1. 4 dozen hard-boiled eggs

  2. 4 cups vinegar

  3. 1 onion , sliced

  4. 8 habanero peppers

  5. 7 jalapenos

  6. 1/2 cup pickled jalapeno pepper

  7. 2 tablespoons red pepper flakes

  8. 5 dashes hot sauce

  9. 2 tablespoons salt

  10. 3 tablespoons mustard seeds

  11. 3 pinches alum

  12. 4 tablespoons peppercorns

  13. 5 cloves garlic

  14. 2 cups sliced carrots or 2 cups cauliflower (or both)

  1. boil everything except the eggs for about 15 minutes.

  2. put the eggs in a huge jar.

  3. pour the hot brine on top of the eggs.

  4. top off with hot water to completely cover the eggs.

  5. let sit in the refrigerator for 2 weeks.
