  2. Shortcakes:

  3. 2 cups buttermilk baking mix

  4. 2 tbsp. sugar

  5. 2 tbsp. cold butter, diced

  6. Cream Cheese Topping:

  7. 3 ounces cream cheese, softened

  8. 1/2 cup sugar

  9. 2 large egg yolks

  10. 1 cup sour cream

  11. 1 tsp. finely grated lemon peel

  12. 2 cups mixed berries such as blueberries, blackberries, sliced strawberries, etc.

  1. For Shortcake:

  2. Preheat oven to 375 degrees. Stir together baking mix and sugar in a medium bowl. Cut in butter until coarse crumbs form. Press shortcake mixture into the bottom of an ungreased 8x8 inch baking pan. Bake about 10 minutes until edges are lightly browned.

  3. For Topping:

  4. Mix together cream cheese, sugar, yolks, sour cream and lemon peel in a medium bowl until smooth. Pour over shortcake layer and bake about 35 minutes until edges are golden. Transfer pan to a rack and cool completely.

  5. Cut shortcake into squares, spoon berries over and serve.
