  3. 1/3 cup(s) canola oil

  4. 1 large egg , lightly beaten

  5. 1 1/2 cup(s) fat-free (skim) milk

  6. 1 1/2 cup(s) all-purpose flour

  7. 1 cup(s) whole wheat flour

  8. 1 tablespoon(s) baking powder

  9. 1 teaspoon(s) salt

  10. 1/2 teaspoon(s) baking soda

  11. 1 cup(s) walnuts , finely chopped

  1. Preheat oven to 350 degrees F. Spray 9- by 5-inch metal loaf pan with nonstick cooking spray.

  2. In medium bowl, stir together granulated sugar, sugar substitute, oil, and egg. Stir in milk until blended. Add all-purpose flour, whole wheat flour, baking powder, salt, and baking soda, and stir just until combined. Fold in walnuts.

  3. Spoon batter into prepared pan. Bake 1 hour or until toothpick inserted in center comes out clean. Cool loaf in pan on wire rack 15 minutes; remove loaf from pan and cool completely on rack. For easier slicing, refrigerate loaf before serving.
