  1. For Meatballs:

  2. 1 large shallots , peeled

  3. 1/4 cup fresh mint or cilantro (or both)

  4. 2 green onions

  5. 1 inch piece ginger , peeled

  6. 1 jalapeno or red chili (or serrano)

  7. 1 carrot , peeled and shredded

  8. 2 tbsp soy sauce (or fish sauce )

  9. 2 tbs granulated sugar

  10. 2 tbs canola oil

  11. 2 tbs cornstarch

  12. 1 tsp coarse salt

  13. 1 lb ground pork (Niman Ranch pork chops )

  14. 1 lb ground chicken (organic chicken breasts )

  15. For Sauce:

  16. 1 cup all natural, smooth peanut butter

  17. fresh lime juice , 1-2 limes

  18. rice wine vinegar , to taste

  19. 1/4 cup soy sauce (or fish sauce )

  20. granulated sugar , to taste

  21. garlic chili paste , to taste (such as sambal olek)

  22. hot water , to thin as desired

  23. For serving:

  24. 2 heads butter lettuce , more of the inner leaves, separated

  25. large cucumber , thinly sliced

  26. julienned carrots

  27. fresh mint (or cilantro ) sprigs

  1. Preheat oven to 400 degrees F.

  2. Combine all ingredients except meats in a food processor and pulse until minced. Transfer to a large bowl and add meats; use your hands to thoroughly combine (just add a little more cornstarch if it's still too "wet").

  3. Form meatballs, using 1 rounded tablespoon each, and place on parchment-lined baking sheets 1 inch apart. Bake 15-20 minutes, or until golden brown and cooked through.

  4. Meanwhile, make sauce by combining all ingredients in a medium bowl. Transfer to serving dish.

  5. Serve meatballs in lettuce cups with cucumber, carrots, mint and a drizzle of sauce(or you can set up all the components and let guests assemble their own)
