  1. 600g baby new potatoes

  2. 6 tbsp olive oil

  3. 1 tbsp Dijon mustard

  4. 2 tbsp white wine vinegar

  5. 1 small finely diced red onion

  6. 1 crushed garlic clove

  7. 2 tbsp capers

  8. 1 pack chives , snipped

  9. 2 x 213g cans salmon , flaked into bite-size pieces

  10. handful watercress

  1. Boil 600g baby new potatoes for 15-20 mins. Cool, then halve. Mix together 6 tbsp olive oil, 1 tbsp Dijon mustard, 2 tbsp white wine vinegar, 1 small finely diced red onion, 1 crushed garlic clove, 2 tbsp capers and 1 pack chives, snipped.

  2. Mix potatoes and 2 x 213g cans salmon, flaked into bite-size pieces, with handful watercress. Drizzle over dressing.

  3. Healthy benefits Red salmon is a good source of omega-3 fats and the vitamins B3 and B12, which promote a healthy heart.
