  1. 2 potatoes, peeled and cubed

  2. 2 Tbsp. olive oil

  3. 1/2 tsp. garlic salt

  4. 1/8 tsp. pepper

  5. 10-oz. bag mixed salad greens

  6. 2 hard cooked eggs, chopped

  7. 1/2 cup grated Parmesan cheese

  8. 1 cup creamy Parmesan salad dressing

  1. For hard cooked eggs, see egg salad sandwich spread recipe .

  2. Toss potatoes with olive oil and garlic salt and place on a cookie sheet. Roast them at 400 degrees for 35-50 minutes until they are brown and crispy. Drain on paper towels and let cool about 10 minutes. Combine remaining ingredients in large bowl and toss gently. Top with potato croutons and serve.
