  1. 1 cup whole wheat flour

  2. 1 cup rolled oat

  3. 1 cup natural bran

  4. 1/2 teaspoon salt

  5. 1/3 cup non-fat powdered milk

  6. 1/2 teaspoon baking soda

  7. 2 teaspoons baking powder

  8. 1 cup mashed banana

  9. 2 egg whites

  10. 3 -4 tablespoons honey or 3 -4 tablespoons maple syrup or 3 -4 tablespoons molasses

  11. 2 tablespoons vegetable oil

  12. 1 cup orange juice

  13. 2 tablespoons dark rum or 2 teaspoons rum extract

  1. Preheat oven to 400 degrees.

  2. Combine dry ingredients.

  3. In a larger bowl, mash the banana and beat in the egg whites until mixture is frothy.

  4. Blend in the honey, vegetable oil (if using), orange juice and rum.

  5. Incorporate dry ingredients and blend just until combined.

  6. Lightly grease muffin tins and fill two-thirds.

  7. *This oil can be eliminated for completely fat-free muffins.

  8. Bake for 18-20 minutes.
