  1. 2 tablespoons walnut oil

  2. 6 cups shredded red cabbage

  3. 1/3 cup apple juice or cider

  4. 1 Granny Smith apple, peeled and coarsely chopped

  5. 2 tablespoons red wine vinegar

  6. 3/4 teaspoon thyme

  7. 1/4 teaspoon allspice

  8. 1/4 teaspoon salt

  9. 1/8 teaspoon black pepper

  1. Heat the oil in a Dutch oven or large, deep skillet over medium to low heat. Stir in the cabbage and cook, stirring occasionally, until it begins to wilt, 5 to 6 minutes. Stir in the apple juice or cider, the apple, vinegar, thyme, and allspice. Cover and cook over low heat until the cabbage is very tender, 25 to 30 minutes, stirring occasionally. Season with salt and pepper.
