  1. 1 sm Onion

  2. 2 ts Oil

  3. 1 Clove garlic

  4. 1 ts Cumin

  5. 1 ts Paprika

  6. 1/2 Red bell pepper -- chopped

  7. 1/2 ts Oregano

  8. 1 c Brown rice

  9. 1/2 ts Salt

  10. 2 c Water

  1. Chop onion and saute in oil with garlic clove. When onion is translucent, add cumin, paprika, and red bell pepper and cook a moment more, until spices are fragrant. Mash garlic clove with a fork. Add oregano, rice, salt and water. Bring to a boil, then reduce heat and simmer on lowest flame for about an hour, until done.
