  1. One 3 1/2 lb chicken cut in pieces (legs, thighs, breast etc.)

  2. 1/2 cup olive oil

  3. 1 large spanish onionchopped

  4. 1 red bell pepper , chopped

  5. 1 yellow bell pepper , chopped

  6. 3-4 large garlic cloves minced

  7. 1-1/2 lbs. Italian, Spanish or Portuguese sausage cut in

  8. 1-1/2" chunks

  9. Note: I prefer italian sausage

  10. 16 oz. can plum tomatoes

  11. 1 Tbsp. Hungarian paprika

  12. 1-2 bay leaves

  13. 2 cups long grain rice

  14. 1/2 cup white wine

  15. 3 cups chicken stock

  16. 1 tsp. salt

  17. 1 tsp. black pepper

  18. 1 bunch of Italian flat leafed parsley , chopped

  1. Heat olive oil in a heavy Dutch oven.

  2. Carefully brown all of the well seasoned (salt and peppered) chicken pieces. Should take about 15 minutes.

  3. Add onion, peppers and garlic and continue to cook for an additional 5 minutes.

  4. Add rice and blend well with the vegetables and oil and cook for a few minutes.

  5. Add paprika and salt.

  6. Add wine and reduce for a few minutes.

  7. Add tomatoes, chicken stock and bay leaves and bring the mixture to a gentle simmer.

  8. Cover with lid or tin foil and place in a 375 degree oven for 40 minutes. Garnish with chopped parsley.
