  1. Extra lean ground beef 1 Pound

  2. Taco seasoning 35 Gram (1 packet)

  3. Russet potato 3 Large , thinly sliced

  4. Red pepper 1 Cup (16 tbs) , diced small

  5. Jalapeno pepper 1 Tablespoon , finely chopped

  6. Green onion 4 , sliced

  7. Philadelphia cream cheese 250 Gram (light or regular)

  8. Chicken stock 14 Cup (4 tbs) (hot)

  9. Shredded sharp cheddar cheese 2 Cup (32 tbs)

  10. Corn tortilla 1 Cup (16 tbs) , crush (corn tortilla chips)

  1. Directions GETTING READY 1. Grease a rectangular 9 x 13 cake pan with cooking spray and set it aside.

  2. Preheat oven to 350 degree F.

  3. MAKING 3. Place a pan on medium high heat and brown beef in it.

  4. Add taco seasoning and 1 cup of water. Stir and let it simmer for 10 minutes.

  5. Line the bottom and sides on cake pan with potato slices as shown in the video.

  6. Add half of the meat mixture and spread it evenly on top.

  7. Sprinkle half of green onion, red pepper, and jalapeno pepper.

  8. In a medium sized bowl, add cream cheese, and hot chicken stock. Mix until nice and creamy.

  9. Spoon half of the cheese mixture into the cake pan and spread evenly.

  10. . Sprinkle ½ of the cheese on top and repeat the process. After the second layer of cream cheese mixture spread crushed tortilla and then sprinkle remaining cheese.

  11. . Cover with greased foil and pop the pan in oven. Bake for 60 minutes. Uncover and bake for an additional 20-30 minutes or until the top is brown and bubbly.

  12. . Remove the pan from oven and allow it to rest for 10 minutes.

  13. SERVING 13. Cut into slices and serve with a dollop of sour cream and fresh cilantro garnish.
