  1. 2 tablespoons 30ml Good olive oil

  2. 4 Red skin potatoes - (about 1/2 lb) - quartered and boiled

  3. 1 cup 62g / 2 1/5oz Chopped ripe red tomatoes

  4. 1/4 cup 15g / 1/2oz Chopped onion

  5. 1 teaspoon 5ml Chopped garlic

  6. 1 tablespoon 15ml Chopped oregano

  7. Salt - to taste

  8. Freshly ground black pepper - to taste

  9. 1/2 cup 118ml Crumbled feta - (about 4-oz)

  1. Preheat the oven to 400 degrees.

  2. In a large saute pan, heat the oil until it begins to ripple. Add the potatoes, cooking and tossing until they are all golden. Add the tomatoes and onions and cook for 2 minutes. Add the garlic and oregano, toss to combine. Season with the salt and pepper. Top with the feta and place in the oven for 10 minutes.
