  1. 1 1/2 lbs bok choy

  2. 1 teaspoon salt

  3. 1 tablespoon sunflower oil

  4. 1 tablespoon fresh ginger , grated finely (about 1in piece)

  5. 1 red chili pepper , seeded and finely diced

  6. 2 garlic cloves , very finely chopped

  7. 2 tablespoons light soy sauce

  8. 2 teaspoons Thai fish sauce (nam pla)

  1. Place the bok choy in a steamer set over a pan of boiling water and sprinkle over the salt.

  2. Cover and cook for 3-5 mins until tender, then tip into a warmed serving dish.

  3. Meanwhile heat a wok or large frying pan until hot. Add the oil, ginger, chili and garlic and stir fry for 1 minute.

  4. Add the soy sauce and fish sauce, heat through and drizzle over the bok choy to serve.
