  1. 2 T olive oil

  2. 1/2c chopped onion

  3. 1 clove garlic, crushed

  4. 2 large potatoes, peeled and chopped

  5. 2 c water

  6. 1 1/2c grated Parmesan cheese

  7. 2c milk

  8. 2 t salt pepper to taste

  9. 1/2c cream

  1. Saute onions in olive oil. Add garlic and potatoes to pot, add the water and bring to a boil. simmer 20 minutes. Stir in 1 cup of the Parmesan cheese. Put in blender or food processor until smooth.Return to pot, add milk and seasonings. Heat 5 minutes. Remove from heat, add cream. sprinkle bowls with cheese, parsley.
