  1. 6 hard-boiled eggs , peeled

  2. 1 tablespoon diced green onion

  3. 1 tablespoon chopped fresh cilantro

  4. 1 small serrano peppers or 1 small jalapeno pepper, seeded & finely chopped

  5. 1/4 cup mayonnaise

  6. 1 teaspoon prepared mustard

  7. 1/2 teaspoon salt

  8. 1/4 cup shredded cheddar cheese (1 oz)

  9. chili powder

  1. Cut eggs in half (crosswise); carefully remove yolks.

  2. Mash yolks& stir in green onions& next 5 ingredients.

  3. Spoon into eggwhites; sprinkle with cheese& chili powder.

  4. Cover& chill.
