  1. 1 cup shortening

  2. 1/2 cup plus 3 tablespoons sugar, divided

  3. 1/4 cup packed brown sugar

  4. 1 egg

  5. 1 teaspoon almond extract

  6. 2 cups all-purpose flour

  7. 1-1/2 teaspoons baking powder

  8. 1/8 teaspoon salt

  9. 3 tablespoons sliced almonds

  1. Almond Cookies Recipe photo by Taste of Home In a small bowl, cream the shortening, 1/2 cup sugar and brown sugar until light and fluffy. Beat in egg and extract. Combine the flour, baking powder and salt; gradually add to creamed mixture and mix well.

  2. Shape into 1-in. balls. Roll in remaining sugar. Place 2 in. apart on ungreased baking sheets. Flatten with the bottom of a glass. Press three almond slices into the center of each.

  3. Bake at 350° for 9-11 minutes or until edges are lightly browned. Cool for 2 minutes before removing to wire racks. Yield: 3 dozen.
