  1. 4 tablespoons curry powder

  2. 4 tablespoons butter or margarine, melted

  3. 2 tablespoons shallots minced

  4. 2 Cloves garlic blanch and pureed

  5. 2 cups fish fumet

  6. 2 cups heavy whipping cream

  7. 1 each lime juice

  8. 1 teaspoon salt or to taste

  9. 20 each oysters wellfleet, large

  10. 2 pounds whitefish trimmings

  11. 1 cup mushrooms sliced

  12. 1 each carrot small, chopped

  13. 1 each onion white, medium, sliced thin

  14. 1 cup oyster liqueur

  15. 1 cup white wine

  16. 4 cups water

  17. 1 each bay leaf

  18. 1 teaspoon peppercorns

  19. 1/2 teaspoon fennel seeds

  20. 2 Sprigs parsley leaves

  21. 1 teaspoon thyme fresh, minced

  22. 4 each bananas red, ripe

  23. 2 teaspoons serrano chiles minced

  24. 2 tablespoons corn oil

  25. 2 tablespoons lime juice

  26. 2 tablespoons cilantro minced

  27. 2 teaspoons mint minced

  28. 2 tablespoons tamarind paste

  29. 1/2 cup sweet red bell pepper

  1. Cut the red bananas into 1/4-inch dice.

  2. Cut the red pepper into 1/4-inch dice.

  3. In a very heavy skillet, sauté the curry powder in the butter until fragrant.

  4. Stir in the shallots and garlic, and add the fumet.

  5. Reduce the mixture until 1/4 cup remains.

  6. Whisk in the cream and continue reducing until slightly thick.

  7. Whisk in the lime juice and salt.

  8. Broil or grill the oysters over pecan or mesquite until they open.

  9. Remove the top shell, pour the curry sauce over them and top with the Banana Salsa.

  10. Fish Fumet: Combine all of the ingredients in a large saucepan and bring to a boil.

  11. Lower the heat and simmer for 40 minutes.

  12. Remove from the heat and let sit for another 30 minutes.

  13. Strain and reserve the liquid.

  14. Banana Salsa:

  15. Mix all of the ingredients together blending well.
