  1. 3 teaspoons salt

  2. 2 teaspoons garlic teaspoon ground

  3. 1 large lemon, rind finely

  4. 2 tablespoons olive

  5. 8 large chicken drumsticks, skin cup self-raising-Olive oil cooking

  1. Preheat oven to 220C.

  2. Lightly grease a large roasting dish.

  3. Combine salt flakes, garlic, paprika and lemon rind in a bowl. Add oil and stir to combine.

  4. Place drumsticks in a large bowl, spoon over oil mixture. Using fingertips, rub into chicken to coat.

  5. Place flour in a snap-lock bag. Add drumsticks, 1 at a time, and toss to coat.

  6. Place drumsticks in prepared roasting dish. Spray both sides lightly with oil.

  7. Roast drumsticks for 20 minutes, turn, spray again with oil and roast for a further 15-20 minutes or until just cooked through.
