  1. 6tbsp olive oil

  2. 4 large cloves garlic, unpeeled

  3. 1kg (2lb 3oz) potatoes, cut into 4cm cubes

  4. 4 large rosemary sprigs

  5. 2tbsp fresh rosemary, chopped

  1. Preheat oven to 200C/395F/gas 6. Put oil and cloves in roasting tin and heat in oven. Boil potatoes in salted water until tender; drain. Toss potatoes in the oil in the roasting tin. Scatter with rosemary sprigs. Cook for 30 mins until golden.

  2. Remove rosemary sprigs and toss potatoes in the chopped rosemary. Season, then serve.
