  1. 1 tablespoon olive oil

  2. 1 onion, chopped

  3. 1 (400g) tin black beans, undrained

  4. 1 (400g) tin whole plum tomatoes

  5. 1 teaspoon dried oregano

  6. 1 clove garlic, minced

  7. 150g (5 oz) easy cook brown rice

  1. In large saucepan, heat oil over medium high. Add onion, cook and stir until tender. Add beans, tomatoes, oregano and garlic. Bring to the boil; stir in rice. Cover; reduce heat and simmer 5 minutes.

  2. Remove from heat; let stand 5 minutes before serving.
