  1. About 6-8 pieces of fresh tilapia (fillet)

  2. For Marinade:

  3. 1 cup fresh lemon juice

  4. chopped parsley

  5. 3 mashed garlic cloves

  6. salt and pepper to taste

  7. a little bit of paprika

  8. For Frying:

  9. approx 1/4 cup flour

  10. approx 1 egg

  11. For Vinaigrette:

  12. 1/2 cup fresh lemon juice

  13. 1 TB balsamic vinegar

  14. 2/3 cup olive oil

  15. 3 garlic cloves, minced

  16. 2 tsp. Dijon mustard

  17. 1 tsp. minced fresh thyme (1/4 dried)

  18. 1/2 tsp. salt, or to taste

  19. 1 tsp. pepper

  20. For Salad: (can be varied)

  21. Mixed baby greens

  22. Thinly sliced radishes

  23. quartered artichoke hearts

  24. Thinly sliced fennel

  25. Slivered almonds

  1. Rinse Tilapia fillets thoroughly. Marinate filets with the ingredients listed above for at least one hour.

  2. Whisk the egg in a bowl and spread the flour on a plate. Dip the fillets in the egg on both sides and then immediately place in the flour to cover the fillet.

  3. Heat a fry pan to about 375 degree (or until you hear the sizzle). Fry fish on both sides until cooked. Depending on the thickness but it can take anywhere from 2-4 minutes on each side. (sometimes more).

  4. Time to assemble the salad: Place the bed of greens first, the the sliced fennel and radishes and artichokes. Leave the slivered almonds to the end. When the fish is ready place the fish on top of the bed of salad and then sprinkle the slivered almonds.

  5. For the Vinaigrette,(You can make this ahead of time) combine all the ingredients and whisk together until the mixture thickens a bit. You can place it in the refrigerator if you are making it ahead of time and it will thicken a bit more during this time as well.

  6. You can drizzle the vinaigrette or place it in a saucer so your family and guest can pour. Bon appetite!
