  1. 3 eggs, beaten

  10. 4 cups diced unpeeled apples

  11. 1 cup coarsely chopped walnuts

  12. CREAM CHEESE FROSTING:

  13. 2 packages (3 ounces each ) cream cheese, softened

  14. 1/4 cup butter, softened

  15. 1-1/2 cups confectioners' sugar

  16. 1/2 teaspoon vanilla extract

  1. Apple Walnut Cake with Cream Cheese Frosting Recipe photo by Taste of Home In a large bowl, beat together eggs, sugar, oil and vanilla. Combine flour, baking soda, cinnamon, nutmeg and salt; mix into the batter. Fold in apples and nuts.

  2. Spread into a 13-in. x 9-in. baking pan. Bake at 325° for 50-60 minutes or until cake tests done. Cool.

  3. For the frosting, combine all ingredients in a small bowl. Whip until smooth and spread over cake. Yield: 12-15 servings.
