  1. 3-1/2 pounds beef chuck or sirloin roast

  2. 2 tablespoons corn oil

  3. 1 teaspoon salt

  4. 1 pepper

  5. 1-1/2 teaspoons garlic powder

  6. 1 large carrot sliced thin

  7. 1 medium white onion chopped

  8. 3/4 cup Burgundy wine

  9. 3/4 cup sour cream at room temperature

  10. 1/2 cup water

  11. 3 tablespoons flour

  12. 1 tablespoon lemon juice

  1. Rub meat with salt and pepper.

  2. Heat oil in Dutch oven over medium heat.

  3. Brown roast on all sides then add garlic, onion and carrots.

  4. Cook until onion is browned then drain grease from pan.

  5. Lower heat and add wine and sour cream.

  6. Cover tightly and simmer over very low heat for 3 hours.
