  1. 6 tbls. butter

  2. 1/2 cup sugar

  3. 1/2 cup light corn syrup

  4. 1/2 of a 14 oz. can of sweetened condensed milk

  5. 1/2 tsp. vanilla

  6. 4 cups coconut , toasted

  7. 1 cup milk or semi sweet chocolate chips

  1. Add butter, sugar, and corn syrup to saucepan

  2. Heat to full boil stirring constantly with wooden spoon

  3. Boil for 3 minutes stirring all the while

  4. Stir in condensed milk slowly

  5. Cook over low heat until candy thermometer reaches 220-228

  6. Remove from heat

  7. Stir in vanilla

  8. Beat until creamy

  9. Stir in coconut and mix well

  10. Spoon mixture by spoonfuls in a circular motion onto buttered parchment paper

  11. Flatten slightly with the end of wooden spoon

  12. Poke hole in the middle with end of spoon

  13. Melt chocolate and drizzle over top of cookie

  14. Cool completely
