  1. 1/2 Kg. Large prawns

  2. 2 Tbsp. onion paste

  3. 1-2 large cloves of garlic , finely chopped

  4. 1 tsp of chopped ginger

  5. 5-10 slit green chillies

  6. 2 cups of coconut milk

  7. 4-5 small bay leaves

  8. 4-5 pieces of cardamom

  9. 4-5 pieces of cloves

  10. 1-2 sticks of cinnamon

  11. 2 Tsps. Red Chilli Powder

  12. 1 Tsp. turmeric powder

  13. 1 Tsp. sugar

  14. salt to taste

  1. Marinade the prawns in a little salt and turmeric for about 30 minutes.

  2. Heat oil in a frying pan.

  3. Fry the prawns lightly, till they turn golden in colour.

  4. Take out the prawns and to the same oil, add the chopped garlic.

  5. Heat for a while, so that the flavour of the garlic is consumed by the hot oil.

  6. Take out the garlic and add the bay leaves.

  7. Coarsely pound the cardamom, cloves and cinnamon and add them too. Heat till the masala starts to crackle.

  8. Add the ginger paste and cook for 5 mins.

  9. Add the coconut milk, stirring continuously.

  10. Add around 1 cup of water.

  11. Add the red chilli powder, a pinch of turmeric powder and adjust salt according to taste. Stir and cook the gravy.

  12. When the gravy starts to boil, add the golden-fried prawns.

  13. Cook on low flame till the gravy thickens and acquires a creamy consistency.

  14. Serve hot with steaming white rice.
