  1. 2 1/2 lbs chicken drummettes or 2 1/2 lbs chicken pieces

  2. 2 large potatoes , cut into medium chunks

  3. 2 carrots , cut into 2 inch pieces or 10 -12 baby carrots

  4. 1 large onion , cut into 8 pieces

  5. 1 green bell peppers , diced or 1 red bell pepper

  6. 4 garlic cloves , chopped

  7. 1/2 cup water

  8. 1/3-1/2 cup soy sauce

  9. 2 tablespoons white sugar (or to taste)

  10. 1 teaspoon fresh ginger

  11. 3 tablespoons hot pepper paste or 3 tablespoons korean red pepper paste or 3 tablespoons sweet chili sauce or 3 tablespoons hot sauce

  1. In a large pot over medium heat, mix the chicken, potatoes, carrots, onion, sugar, ginger and garlic.

  2. Pour in water and soy sauce, and stir in sugar and hot pepper paste.

  3. Bring to a boil, reduce heat to low, and simmer 45 minutes, until chicken juices run clear, vegetables are tender, and liquid has thickened.

  4. You may also cook this in the crock pot for several hours.

  5. The liquid will thicken as it cools.
