  1. 1/4 cup vegetable oil

  2. 2 tablespoons cider vinegar

  3. 1 teaspoon salt

  4. 1 teaspoon freshly ground black pepper

  5. 1 teaspoon minced garlic

  6. 1 tablespoon finely chopped white onion

  7. 1/2 teaspoon dried thyme crushed

  8. 1/4 cup chopped fresh parsley

  9. 3-1/2 pound chuck roast

  10. Cream:

  11. 1/2 cup sour cream

  12. 1/2 cup mayonnaise

  13. 1/4 teaspoon salt

  14. 1/4 teaspoon freshly ground black pepper

  15. 1 tablespoon prepared horseradish

  16. 1 teaspoon fresh lemon juice

  17. 1 teaspoon spicy mustard

  18. 1/4 cup fresh parsley

  1. In Dutch oven stir together all marinade ingredients except parsley and roast then stir in parsley.

  2. Place roast in marinade and turn to coat all sides with marinade.

  3. Cover and refrigerate overnight then preheat oven to 350 and bake roast in marinade 2 hours.

  4. Stir together all cream ingredients except parsley then stir in parsley then serve with roast.
