  1. 3 pounds beef chuck cubed

  2. 1/2 pound pork ground

  3. 1 tablespoon flour, all-purpose

  4. 1 tablespoon vegetable oil

  5. 1/3 cup dehydrated onions minced

  6. 1/2 teaspoon garlic granulated

  7. 1 can beef stock prefer veal stock if possible

  8. 2 cans chicken broth

  9. 8 ounces tomato sauce

  10. 1/2 teaspoon cumin

  11. 4 ounces green chili peppers mild

  12. 1 each jalapeño pepper seeded, deveined, minced

  13. 1 teaspoon black pepper

  14. 3 tablespoons chili powder

  15. Phase 2

  16. 4 cans tomato sauce

  17. 1/4 cup chili powder

  18. 2 tablespoons chili powder mild

  19. 2 tablespoons cumin

  20. 1 teaspoon garlic granulated

  21. 1 teaspoon red hot pepper sauce (eg. Tabasco)

  22. 1/2 tablespoon brown sugar

  23. 1 x salt to taste*

  1. Saute meat in oil.

  2. Drain and place in a 4 quart cooking pot.

  3. Add remaining ingredents from Phase 1 of ingredients and simmer covered, 1-1/2 hours.

  4. Uncover, add remaining Phase 2 ingredients and simmer 1-1/2 hours.
